Chicken Riggies

A rich and comforting pasta dish featuring tender chicken, rigatoni, and a creamy tomato sauce with just the right touch of heat. Balanced with butter, cream, and savory depth, this elevated take on chicken riggies brings bold flavor and warmth to the table. 

Ingredients

Prep Time: 30 mins
Cook Time: 50 minutes

  • 1 lbs Rigatoni Pasta
  • 1.5 lbs of chicken breast
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves of garlic, chopped
  • 3/4 cup of grated Parmesan cheese
  • 3/4 cup grated Pecorino Romano cheese
  • 1 small onion, chopped
  • 1 green bell pepper, sliced
  • 2 red bell pepper, sliced
  • 3- 8oz packs of Baby Bella mushrooms, sliced
  • 3 - 28oz cans of whole peeled tomatoes (Cento is my preference
  • 1 pint of heavy cream
  • 1-2 hot cherry peppers, sliced (adjust for heat preference) 
  • Salt, garlic powder and pepper to taste

Instructions

In a large pot heat olive oil on medium heat

Coat chicken with salt, pepper, and garlic powder, add to pot, cook chicken for about 10 minutes on each side

Once chicken is done, put chicken in a bowl and let cool a bit

Add onions, garlic, olive oil and butter to the pan, cook for about 5 mins or until golden brown

Add in peppers, salt, pepper and garlic powder and cook about 8 minutes or until they are a bit softened, cook on medium heat

Use a blender, hand blender or break the peeled tomatoes up with your hands. If you used a blender or hand blender it will make more of a crushed sauce, by hand it will be more of a chunky lighter sauce

Pull the chicken apart verse cut it, its okay if its not full cooked, it will continue to cook in pot

Once chicken is all pulled at it to the pan with the peppers and continue to cook for 5 minutes

Add in your cherry tomatoes, cook for 3 minutes

Add in blended sauce, salt, pepper, garlic powder and cook till it is boiling

Add in mushrooms and cook for 8-10 minutes

Add in heavy cream, both cheeses and cook on low for 20 minutes, add in any additional salt and pepper to your taste liking, the longer it cooks the more flavorful it gets

Cook rigatoni, add cooked rigatoni to plate, top with chicken riggies and Romano cheese
