Buttery White Wine Chicken Meatballs

Tender chicken meatballs simmered in a silky white wine butter sauce with fresh herbs and a touch of lemon. Finished with parmesan and parsley, this comforting skillet dish is bright, rich, and perfect for an easy yet elegant dinner.

Ingredients

Prep Time: 30 mins
Cook Time: 20 minutes

Meatballs

  • 2 pds Ground Chicken
  • 2 Tbsp of Parsely chopped
  • 2 shallots chopped
  • 2 Tbsp milk
  • 1/4 cup Parmesan cheese
  • 1/4 cup Pecorino Romano cheese
  • 1 cup of breadcrumbs
  • 3 garlic gloves chopped
  • 2 eggs
  • salt and pepper

Sauce

Salt and pepper to taste

3 Tbsp olive oil

8 Tbsp Butter

1 cup White wine (Chardonnay preferably) 

2 Tbsp flour

  • 2 Tbsp of Capers
  • 1 shallot chopped
  • 2 Tbsp of Parsely chopped
  • 1/4 cup Parmesan cheese

  • 1/4 cup Pecorino Romano cheese

  • Juice from 1 quarter of a lemon (optional)

Instructions

Preheat the oven to 400°F.

In a large bowl, combine the ground chicken, breadcrumbs, parmesan, egg, garlic, 2 shallots, parsley, and salt & pepper. Mix until just combined

Form the mixture into evenly sized meatballs and place them on a lightly greased or parchment-lined baking sheet. (can make small or large meatballs)

Bake for about 15–20 minutes, or until the meatballs are mostly cooked through and lightly golden.

While the meatballs bake, heat a large skillet over medium heat and add oil & butter.

Once the butter has melted, add the 1 shallot and sauté until softened and fragrant.

Pour in the white wine and let it simmer for a few minutes, scraping up any bits from the pan. Add in flour and stir till combined

Stir in the remaining sauce ingredients, including a touch of lemon juice if using, and let the sauce gently simmer until slightly reduced.

Add the baked meatballs to the skillet and spoon the sauce over the top.

Let everything simmer together for a 5 minutes so the meatballs absorb the flavor and finish cooking through.

Finish with extra parmesan and fresh parsley before serving.​

Serve warm with crusty bread, pasta, or your favorite side.
